About my Chicken Katsu the other evening

Chicken Katsu curry πŸ‡―πŸ‡΅ is right up there in my top 5 meals and as I’m still trying to eat healthy I had it with a quick little Asian style salad instead of jasmine rice. I even air fried my breaded chicken and in all honesty it still tasted amazing and crunchy πŸ˜‹

Ingredients for curry sauce ⬇️
Few sprays of oil spray
1 white onion
3 finely sliced spring onions
1 chopped celery stick
2 garlic
1 thumb of ginger
1/2 dessert apple – peeled and roughly chopped
1 tbsp chopped coriander
2 tsp curry powder
Salt and pepper
100ml coconut milk
1 table spoon light soy sauce
1 table spoon honey

Add the oil, spring onions, white onion, celery stick, garlic, ginger and apple into a pan and cook for 10mins nice and low. I then added the curry powder and cooked again for couple of minutes. Then add the coconut milk, soy sauce and honey and simmer for 20mins. – who else loves a quick and tasty meal in the week? πŸ™Œ
