Chicken and Garlic Bread Kebab 🐔🧄
I picked rosemary leaves and smash them up in a pestle and mortar with a pinch of sea salt. KEEP THE STALKS for later . Then peel and crush in the garlic, then add 1 tablespoon of oil, the vinegar and a generous pinch of cayenne. Cut up some chicken breasts and soughdough bread into squares, then toss and mix into your rosemary and garlic marinade. Leave to marinade in fridge for an hour 😊
Take your rosemary stalks and carefully assemble your kebabs with the chicken then the soughdough bread and repeat. I then got a hot pan ready with a little oil and laid the kebabs down. I placed a plate onto of the chicken with the pestle on top of the plate – this makes the chicken become nice and crispy along with the bread. 4-5 mins on each side till cooked !!
Whip up a salad of your choice, I recommend blood orange in the salad, squeeze of lemon juice, balsamic vinegar as these compliment the kebabs well. Bring the dish all together by adding the kebabs to the salad and sprinkle feta cheese all over 🥗
