Don’t need no meat, when you’ve got all the beet

Beetroot and Goats Chesse Orzo Pasta

If you are short on time but want a delicious colourful plate of food, healthy and flavourful then this is for YOU. Makes a real change to have a vegetarian dinner aswell.

Ingredients
500g cooked beetroot, peeled and cut into 3cm cubes
2 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, crushed
300g orzo pasta
800ml vegetable stock
Small bunch fresh dill, roughly chopped
80g soft goat’s cheese
50ml white wine
100g rocket

Method
πŸ‘©β€πŸ³ Add a little oil to pan, soften the onions and garlic for 8mins
πŸ‘©β€πŸ³ Add cooked beetroot cubes and orzo pasta
πŸ‘©β€πŸ³ Add white wine and cook for 5 mins
πŸ‘©β€πŸ³ Pour in vegetable stock and simmer for 15 mins, if need more water add a little bit at a time
πŸ‘©β€πŸ³ Once the pasta is cooked to your liking then turn heat off and stir in goats cheese, sprinkle Dill and rocket. Plate up ENJOY

Oh and finally I had some homemade walnut pesto I fridge needed to use up so added this on top WOW forgot how good it was !
