Whole roasted cauliflower cheese should be on everyone agenda on a Sunday roast. Roasting a whole cauliflower looks so impressive, especially when it’s covered in a layer of cheesy breadcrumbs and served with a rich cheese sauce and a jug of thick gravy.
Cheesy breadcrumbs adds to the texture of the cauliflower. Breadcrumbs ingredients – thyme, butter and cheese blended together.
Start by roasting the cauliflower with 50g of butter smoothed over the top for 20mins in an oven at 180degrees covered In foil. After the 20mins baste the cauliflower with the buttery juices and put back into the oven for another 30mins. Then make your breadcrumbs while that’s in the oven.
Remove cauliflower from the oven and allow to rest for 10mins then place the breadcrumbs on top and again leave to rest for 30mins to let the breadcrumbs set. At this point I made a cheese sauce in a pan, butter, flour to make a roux,cook out the flour for 10mins, then add hot milk slowly stirring quickly to ensure no lumps. Then add your favourite cheese and keep stirring until the cheese melts. Turn the heat down and cook out for 20-30mins stirring every now and then. Taste and season!!!!
Put the beauty of a cauliflower back into the oven 40-50 mins until it’s beautifully golden brown turn the temperature to 160 😍 whip up a quick gravy while its in the oven. Once removed from oven, immediately put cheese sauce on top and then that jug of thick gravy!!! Enjoyyyyyyy 🧀
